- 2 large yellow onions, thinly sliced
- 1 tablespoon fresh thyme leaves

- 2 (8 oz) store-bought crescent dough sheets
- 16 slices provolone cheese, divided
- ¾ lb sliced deli roast beef
- 1 tablespoon unsalted butter (for au jus)
- 1 clove garlic, minced
- 2 cups beef stock
- 1 tablespoon Worcestershire sauce
- ½ teaspoon fresh thyme leaves (for au jus)
- Kosher salt and pepper, to taste (for au jus)
Instructions
- Preheat the oven: Start by preheating your oven to 375°F (190°C). Line a baking sheet with parchment paper to prevent sticking.
- Caramelize the onions: In a skillet over medium heat, melt 3 tablespoons of butter. Add the sliced onions and thyme. Season with salt and pepper. Cook for 10-15 minutes until golden brown.
- Prepare the dough: Unroll the crescent dough sheets and lay them flat on a clean surface.
- Layer ingredients: Layer half of the provolone cheese, half of the caramelized onions, and half of the sliced roast beef on the dough.
- Roll it up: Roll the dough tightly into a log and slice it into 1-inch pinwheels.
- Bake the pinwheels: Place the pinwheels cut-side up on the prepared baking sheet. Bake for 15-18 minutes until golden brown.
- Make the au jus: Melt 1 tablespoon of butter in a saucepan, add minced garlic, and cook until fragrant. Stir in the beef stock, Worcestershire sauce, thyme, salt, and pepper; simmer for 5-7 minutes.
- Serve: Once baked, serve the pinwheels warm with au jus for dipping.
