Description

Savory pinwheels filled with roast beef, provolone cheese, and caramelized onions, served with a rich au jus for dipping.


Ingredients

  • 3 tablespoons unsalted butter
  • 2 large yellow onions, thinly sliced
  • 1 tablespoon fresh thyme leaves
  • Kosher salt and pepper, to taste
  • 2 (8 oz) store-bought crescent dough sheets
  • 16 slices provolone cheese, divided
  • ¾ lb sliced deli roast beef
  • 1 tablespoon unsalted butter
  • 1 clove garlic, minced
  • 2 cups beef stock
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon fresh thyme leaves
  • Kosher salt and pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Melt 3 tablespoons of butter in a skillet over medium heat. Add the sliced onions and thyme. Season with salt and pepper, and cook for about 10–15 minutes until the onions become caramelized and golden.
  3. Unroll the crescent dough sheets and lay them flat on a clean surface.
  4. Layer half of the provolone cheese, the caramelized onions, and the sliced roast beef over the dough, spreading them evenly.
  5. Roll the dough tightly into a log, then slice it into 1-inch pinwheels.
  6. Place the pinwheels cut-side up on the prepared baking sheet and bake for 15–18 minutes or until they turn golden brown.
  7. For the au jus, melt 1 tablespoon of butter in a saucepan over medium heat. Add the minced garlic and cook for about 30 seconds until fragrant. Stir in the beef stock, Worcestershire sauce, thyme, salt, and pepper. Let it simmer for 5–7 minutes.
  8. Serve the warm pinwheels right out of the oven with the au jus on the side for dipping.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven to restore crunch.
