- 2 cups Long Grain White Rice
- 4 cups Chicken Broth
- 2 pieces Boneless, Skinless Chicken Breasts
- 2 tablespoons Olive Oil
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 1 cup Greek Yogurt
- 2 cloves Minced Garlic
- 1 cup Grated Cucumber
- 2 tablespoons Dill
- 2 tablespoons Lemon Juice
- 1 teaspoon Oregano
- 1 teaspoon Paprika
- 1 cup Cucumber Substitute
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the rice, chicken broth, salt, black pepper, and paprika. Stir well to ensure the rice is evenly coated.
- Pour the rice mixture into a greased baking dish, spreading it out evenly.
- Place the chicken breasts on top of the rice. Drizzle olive oil over the chicken and season with a pinch more salt and pepper.
- Cover the baking dish with aluminum foil and bake for 25-30 minutes.
- While the chicken is baking, prepare your tzatziki sauce. In another bowl, combine Greek yogurt, minced garlic, grated cucumber, dill, lemon juice, oregano, and salt.
- Remove the chicken from the oven, discard the foil, and give everything a good stir. Return the dish to the oven and bake uncovered for an additional 10-15 minutes.
- Once done, remove the dish from the oven and let it cool for a few minutes before serving. Spoon generous portions of tzatziki sauce over each chicken breast and rice serving.
Notes
Serve with a side salad or warm pita for a complete meal. This dish can be made ahead of time and stored in the refrigerator.
