Description

A simple and flavorful dish that combines tender chicken, fluffy rice, and zesty tzatziki sauce for an effortless weeknight meal.


Ingredients

  • 2 cups Long Grain White Rice
  • 4 cups Chicken Broth
  • 2 pieces Boneless, Skinless Chicken Breasts
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 cup Greek Yogurt
  • 2 cloves Minced Garlic
  • 1 cup Grated Cucumber
  • 2 tablespoons Dill
  • 2 tablespoons Lemon Juice
  • 1 teaspoon Oregano
  • 1 teaspoon Paprika
  • 1 cup Cucumber Substitute

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the rice, chicken broth, salt, black pepper, and paprika. Stir well to ensure the rice is evenly coated.
  3. Pour the rice mixture into a greased baking dish, spreading it out evenly.
  4. Place the chicken breasts on top of the rice. Drizzle olive oil over the chicken and season with a pinch more salt and pepper.
  5. Cover the baking dish with aluminum foil and bake for 25-30 minutes.
  6. While the chicken is baking, prepare your tzatziki sauce. In another bowl, combine Greek yogurt, minced garlic, grated cucumber, dill, lemon juice, oregano, and salt.
  7. Remove the chicken from the oven, discard the foil, and give everything a good stir. Return the dish to the oven and bake uncovered for an additional 10-15 minutes.
  8. Once done, remove the dish from the oven and let it cool for a few minutes before serving. Spoon generous portions of tzatziki sauce over each chicken breast and rice serving.

Notes

Serve with a side salad or warm pita for a complete meal. This dish can be made ahead of time and stored in the refrigerator.
