Description

These Date Snickers are chewy Medjool dates stuffed with peanut butter, topped with crunchy peanuts, and coated in smooth chocolate for a healthy candy bar alternative.


Ingredients

Scale

12 Medjool dates, pitted

6 tbsp creamy peanut butter

1/4 cup roasted peanuts, chopped

1 cup chocolate chips or chopped chocolate

1 tsp coconut oil

Sea salt flakes (optional)


Instructions

1. Slice each date lengthwise and remove pits if needed.

2. Fill each date with 1/2 tbsp peanut butter.

3. Sprinkle chopped peanuts over the peanut butter.

4. Melt chocolate with coconut oil until smooth.

5. Dip each filled date into the chocolate to coat.

6. Place coated dates on a parchment-lined tray.

7. Sprinkle with sea salt flakes if desired.

8. Chill for 15 minutes or until chocolate is firm.

9. Serve and enjoy.

Notes

Store Date Snickers in an airtight container in the fridge for up to 2 weeks or freeze for up to 3 months.

For nut-free, use sunflower seed butter and pumpkin seeds.
