Description
A vibrant Crunchy Thai Quinoa Salad tossed with fresh veggies and a creamy peanut dressing for a quick, healthy meal.
Ingredients
1 cup tri-color quinoa, rinsed
2 cups water
1 cup shredded carrots
1 red bell pepper, diced
1 cucumber, diced
1/2 cup roasted peanuts, chopped
1/4 cup fresh cilantro, chopped
1/4 cup fresh mint, chopped
For the peanut dressing:
3 tbsp natural peanut butter
2 tbsp lime juice
2 tbsp soy sauce or tamari
1 tbsp honey or maple syrup
1 tsp grated fresh ginger
1 clove garlic, minced
3–4 tbsp water (to thin)
1 tbsp toasted sesame oil
Instructions
1. Rinse quinoa thoroughly under cold water.
2. Cook quinoa with 2 cups water, bring to boil, reduce heat and simmer 15 mins.
3. Allow quinoa to cool completely.
4. Prepare vegetables and chop herbs.
5. Make peanut dressing by whisking all dressing ingredients together.
6. In a large bowl, combine cooled quinoa, veggies, and herbs.
7. Pour dressing over salad and toss until fully coated.
8. Garnish with chopped peanuts before serving.
9. Let salad rest 10 minutes for flavors to meld.
Notes
Store leftovers in an airtight container in the fridge for up to 2 days.
Serve chilled or at room temperature.
For a spicy kick, add sliced fresh chili or cayenne to the dressing.
