1.5 lbs boneless chicken thighs or beef chuck
2 tbsp olive oil
1 tsp smoked paprika
1 tsp garlic powder
1/2 tsp onion powder
Salt & black pepper to taste
Juice of 1 lemon
2 cloves garlic, minced
Optional: cayenne or chipotle for heat
Instructions
1. Trim and pat dry your meat.
2. Marinate with spices, oil, lemon juice, and garlic for 15-30 minutes.
3. Preheat grill or skillet to medium-high heat.
4. Cook meat for 6–7 minutes per side or until internal temperature reaches 165°F for poultry or 145°F for beef.
5. Let the meat rest for 5 minutes.
