Description
Crispy, golden-brown chicken coated in a flavorful Parmesan crust juicy on the inside, crunchy on the outside, and perfect for an easy weeknight dinner or crowd-pleasing meal.
Ingredients
4 boneless, skinless chicken breasts
1 cup breadcrumbs (Panko preferred)
1/2 cup grated Parmesan cheese
1 tsp garlic powder
1 tsp paprika
1/2 tsp salt
1/2 tsp black pepper
2 large eggs
1/4 cup flour
2 tbsp olive oil (for frying)
Fresh parsley for garnish
Lemon wedges for serving
Instructions
1. Pound chicken breasts to an even thickness using a meat mallet or rolling pin.
2. In a shallow dish, mix breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper.
3. In another dish, whisk the eggs. Place the flour in a third dish.
4. Dredge each chicken breast first in flour, then in egg, then in the breadcrumb-Parmesan mixture, pressing to adhere.
5. Heat olive oil in a large skillet over medium heat.
6. Cook chicken for 4–5 minutes per side, until golden brown and cooked through (internal temperature 165°F/74°C).
7. Transfer to a paper towel-lined plate to drain excess oil.
8. Garnish with parsley and serve with lemon wedges.
Notes
For extra crunch, bake at 425°F (220°C) for 20–25 minutes instead of frying.
Use Italian-seasoned breadcrumbs for added flavor.
Pairs perfectly with mashed potatoes, roasted vegetables, or a simple salad.
