Description

A comforting and exotic chicken soup with creamy coconut and spicy Thai flavors, perfect for weeknight meals.


Ingredients

  • 2 pounds of chicken breasts
  • 1 can of coconut milk
  • 4 cups of chicken broth
  • 1 cup of chopped carrots
  • 1 cup of chopped bell peppers
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 tablespoon of ginger, grated
  • 2 tablespoons of Thai red curry paste
  • Juice of 1 lime
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Add the chicken breasts, coconut milk, chicken broth, carrots, bell peppers, onion, garlic, ginger, and Thai red curry paste to a slow cooker.
  2. Stir to combine all the ingredients well.
  3. Cover your slow cooker and cook on low for 360 minutes or on high for 240 minutes.
  4. Once the chicken is cooked, shred it in the soup using two forks for that perfect texture.
  5. Stir in the lime juice and season with salt and pepper to taste.
  6. Serve hot, garnished with fresh cilantro.

Notes

For a vegetarian option, substitute chicken with chickpeas or firm tofu and use vegetable broth.
