Description
Delicious and easy-to-make patties combining sweet potatoes and red lentils, served with a creamy avocado sauce.
Ingredients

- 2 medium sweet potatoes
- 1 cup red lentils
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 tablespoons flour (or gluten-free flour)
- Oil for frying
- 1 avocado
- 1/4 cup fresh cilantro
- 2 tablespoons lime juice
- Salt to taste
Instructions
- Peel and cube the sweet potatoes. Boil them in a pot of water until they’re tender. Drain the sweet potatoes and mash them until smooth.
- Rinse the red lentils and place them in a separate pot. Cook the lentils in fresh water until they’re soft, which takes about 15-20 minutes.
- Combine the mashed sweet potatoes, cooked lentils, chopped onion, minced garlic, cumin, salt, pepper, and the flour in a large bowl. Mix everything together until it’s well combined.
- Shape the mixture into patties. You can make them as big or small as you like, but remember that smaller patties cook faster!
- Heat oil in a skillet over medium heat. Fry the patties until they turn golden brown on both sides, about 3-4 minutes per side.
- Prepare your avocado cilantro sauce by blending the avocado, cilantro, lime juice, and a pinch of salt until it reaches a smooth consistency.
- Serve the warm patties with the avocado cilantro sauce either drizzled on top or on the side for dipping. Enjoy!
Notes
Serve with a fresh salad or sautéed greens. Can also be made into sliders for parties.
