Crispy Sweet Potato and Red Lentil Patties

Description

Delicious and easy-to-make patties combining sweet potatoes and red lentils, served with a creamy avocado sauce.


Ingredients

  • 2 medium sweet potatoes
  • 1 cup red lentils
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons flour (or gluten-free flour)
  • Oil for frying
  • 1 avocado
  • 1/4 cup fresh cilantro
  • 2 tablespoons lime juice
  • Salt to taste

Instructions

  1. Peel and cube the sweet potatoes. Boil them in a pot of water until they’re tender. Drain the sweet potatoes and mash them until smooth.
  2. Rinse the red lentils and place them in a separate pot. Cook the lentils in fresh water until they’re soft, which takes about 15-20 minutes.
  3. Combine the mashed sweet potatoes, cooked lentils, chopped onion, minced garlic, cumin, salt, pepper, and the flour in a large bowl. Mix everything together until it’s well combined.
  4. Shape the mixture into patties. You can make them as big or small as you like, but remember that smaller patties cook faster!
  5. Heat oil in a skillet over medium heat. Fry the patties until they turn golden brown on both sides, about 3-4 minutes per side.
  6. Prepare your avocado cilantro sauce by blending the avocado, cilantro, lime juice, and a pinch of salt until it reaches a smooth consistency.
  7. Serve the warm patties with the avocado cilantro sauce either drizzled on top or on the side for dipping. Enjoy!

Notes

Serve with a fresh salad or sautéed greens. Can also be made into sliders for parties.
