Ingredients

  • 1/4 cup shredded mozzarella cheese
  • 1 tablespoon erythritol or preferred sweetener
  • 1 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine cream cheese, almond flour, erythritol, cinnamon, and vanilla extract; mix until smooth.
  3. Melt shredded mozzarella cheese in the microwave for about 30 seconds until gooey.
  4. Add melted mozzarella to the cream cheese mixture and stir until combined.
  5. Scoop portions of the mixture and form thin rectangles on the baking sheet.
  6. Brush rectangles with the beaten egg for a shiny finish.
