Ingredients
4 boneless, skinless chicken breasts
1 cup dill pickle juice
1 cup panko breadcrumbs
1/2 cup grated Parmesan cheese
1 tsp garlic powder
1 tsp onion powder
1/2 tsp paprika
Salt and pepper, to taste
1/4 cup all-purpose flour
2 eggs, beaten
2 tbsp olive oil or melted butter
Fresh dill or pickle slices for garnish
Instructions
1. Place chicken breasts in a resealable bag and pour pickle juice over them. Marinate for at least 1 hour (or up to overnight in the fridge).
2. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
3. In a shallow bowl, mix panko breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.
4. Place flour in one bowl, beaten eggs in another, and the breadcrumb mixture in a third.
5. Remove chicken from the marinade and pat dry. Dredge each piece in flour, then dip in egg, then coat generously with the breadcrumb-Parmesan mixture.
6. Arrange chicken on the baking sheet and drizzle with olive oil or melted butter for extra crispiness.
7. Bake for 20–25 minutes, or until golden brown and the internal temperature reaches 165°F (74°C).
8. Serve hot, garnished with fresh dill or pickle slices, and enjoy!
Notes
For extra crunch, broil the chicken for 1–2 minutes at the end.
Air fryer option: Cook at 375°F for 15–18 minutes, flipping halfway through.
