Description
Creme Brûlée Cookies combine the elegance of creme brûlée with the comfort of homemade cookies, featuring caramelized sugar tops and buttery centers.
Ingredients
1 cup unsalted butter (room temperature)
1 cup brown sugar
1/2 cup white sugar
2 large egg yolks
2 tsp vanilla extract
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1/4 cup heavy cream
1/4 cup superfine sugar (for topping)
Instructions
1. Preheat oven to 350°F (175°C) and line baking sheet with parchment.
2. Whisk flour, baking soda, and salt in a bowl.
3. In another bowl, cream butter and sugars until fluffy.
4. Add egg yolks and vanilla; mix until combined.
5. Mix in dry ingredients, then cream.
6. Chill dough 30 minutes.
7. Scoop onto baking sheet.
8. Bake 10–12 minutes until edges golden.
9. Sprinkle tops with superfine sugar.
10. Torch or broil until caramelized.
Notes
For a lighter flavor, use half-and-half instead of heavy cream.
Caramelize sugar just before serving for the best crackle.
