Ingredients

3 garlic cloves, minced

1/3 cup sun-dried tomatoes, chopped

1 tsp Italian seasoning

1/2 tsp red pepper flakes (optional)

2 cans (15 oz each) butter beans, drained and rinsed

1/2 cup vegetable or chicken broth

3/4 cup heavy cream (or coconut cream for dairy-free)

1/3 cup grated parmesan cheese

2 cups fresh spinach

Salt and black pepper, to taste

Fresh basil, for garnish


Instructions

1. Heat olive oil in a skillet over medium heat.

2. Add garlic and sauté until fragrant, about 30 seconds.

3. Stir in sun-dried tomatoes, Italian seasoning, and red pepper flakes.

4. Add butter beans and toss to coat in the aromatics.

5. Pour in broth and heavy cream; stir well.

6. Simmer 5–7 minutes until slightly thickened.

7. Stir in parmesan and allow it to melt into the sauce.

8. Add spinach and cook until wilted.

9. Season with salt and pepper.

10. Garnish with fresh basil and serve warm.

Notes
