  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 2 cups spinach
  • 1 cup sun-dried tomatoes
  • 1 teaspoon Italian seasoning
  • Fresh basil, for garnish

Instructions

  1. Season the chicken breasts with salt and pepper.
  2. In a large skillet, heat the olive oil over medium-high heat.
  3. Add the chicken and cook until golden and cooked through, about 6-7 minutes per side. Remove the chicken and set aside.
  4. In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
  5. Pour in the heavy cream and chicken broth, stirring to combine everything nicely.
  6. Add the Parmesan cheese, spinach, sun-dried tomatoes, and Italian seasoning.
  7. Cook for about 5 minutes until the sauce thickens slightly, creating that delightful creaminess.
  8. Return the chicken to the skillet and coat it well with the sauce.
  9. Garnish with fresh basil before serving.
