A deliciously creamy Tuscan Chicken recipe featuring rich flavors of garlic, sundried tomatoes, and fresh spinach, perfect for any gathering.

- 1 cup heavy cream
- 1 cup milk
- 1/2 cup chicken broth (low sodium)
- 1 small onion (finely diced)
- 1/4 cup sundried tomato pesto
- 1/4 cup sundried tomatoes (in oil, julienned)
- 1 tsp oregano (dry)
- 1/2 tsp thyme (dry)
- 1/2 tsp salt (or more to taste)
- 3/4 tsp black pepper (fresh ground)
- 3/4 tsp chili flakes (or less to taste)
- 1 handful fresh spinach
- 4–6 cloves fresh garlic (minced; use less if you prefer)
- 1 tbsp olive oil
- Fresh chopped parsley or shaved parmesan (optional, for garnishing)
- 2 whole chicken breasts (sliced in half horizontally)
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
Instructions
- Prep the chicken: Start by trimming any excess fat from the chicken breasts. Then, slice each breast in half horizontally to create thinner pieces. Season both sides with salt and pepper.
- Sear the chicken: Heat a large non-stick skillet over medium-high heat. Add 2 tablespoons of olive oil and wait for it to heat up. Once hot, place the chicken in the skillet and sear each side for about 5 minutes until it turns golden brown. Remove the chicken from the skillet and cover it with foil to keep it warm.
- Sauté the onions: In the same skillet, add 1 tablespoon of olive oil and sauté the diced onions for a few minutes until they become tender.
- Add garlic and tomatoes: Toss in the minced garlic and sauté for an additional 30 seconds. Add the sundried tomatoes and sundried tomato pesto, along with the salt and spices. Stir and sauté the mixture for about 1 minute.
- Create the sauce: Pour in the heavy cream, milk, and chicken broth. Stir everything together and let it simmer for a couple of minutes until the sauce begins to thicken.
- Incorporate spinach: Throw in a handful of fresh spinach and let it wilt in the sauce over medium-low heat for about two minutes.
- Combine chicken and sauce: Return the seared chicken pieces to the skillet, making sure to coat them well with the sauce. Cover and let everything cook together on low heat for another 2-3 minutes.
- Garnish and serve: Remove the skillet from the heat. Garnish with fresh chopped parsley or shaved parmesan before serving.
Notes
Serve with mashed potatoes, pasta, or a salad. Ideal for weeknight dinners or gatherings.
