Description
Tender seared salmon fillets topped with a creamy roasted red pepper sauce a stunning, flavorful meal that feels gourmet but comes together in under 30 minutes.
Ingredients
4 salmon fillets (about 6 oz each)
1 tbsp olive oil
Salt and black pepper, to taste
1/2 tsp smoked paprika
For the Creamy Roasted Red Pepper Sauce:
1 tbsp butter
2 garlic cloves, minced
1 (12 oz) jar roasted red peppers, drained
1/2 cup heavy cream (or half-and-half)
1/4 cup grated Parmesan cheese
1 tsp Italian seasoning
1/4 tsp red pepper flakes (optional)
Salt and pepper, to taste
Fresh basil or parsley, for garnish
Instructions
1. Pat salmon fillets dry and season with salt, pepper, and smoked paprika.
2. Heat olive oil in a large skillet over medium-high heat.
3. Sear salmon for 4–5 minutes per side, or until golden and cooked through. Transfer to a plate and keep warm.
4. In the same skillet, melt butter and sauté garlic for 30 seconds.
5. Add roasted red peppers and cook for 2 minutes.
6. Transfer mixture to a blender or use an immersion blender to puree until smooth.
7. Return sauce to the pan, stir in cream, Parmesan, Italian seasoning, and red pepper flakes.
8. Simmer gently for 2–3 minutes, adjusting salt and pepper to taste.
9. Return salmon to the skillet and spoon sauce over the fillets.
10. Garnish with fresh herbs and serve warm.
Notes
Serve over pasta, rice, or mashed potatoes for a complete meal.
For a lighter option, swap heavy cream with coconut milk.
Leftover sauce can be refrigerated up to 3 days and used for chicken or shrimp.
