Ingredients

2 cans (15 oz each) chickpeas, drained and rinsed

3 tablespoons tahini, well-stirred

4 cloves garlic, minced

1 medium onion, diced

4 tablespoons olive oil, divided

4 cups low-sodium vegetable broth

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

2 tablespoons fresh lemon juice

Salt and black pepper to taste

Fresh parsley for garnish


Instructions

1. Preheat oven to 425°F and line baking sheet with parchment paper.

2. Pat chickpeas completely dry and spread on baking sheet.

3. Drizzle with 2 tablespoons olive oil, season with salt and pepper, toss to coat.

4. Roast chickpeas for 20-25 minutes until golden brown, shaking pan halfway through.

5. Heat remaining 2 tablespoons olive oil in large soup pot over medium heat.

6. Sauté onions for 5-6 minutes until translucent, then add garlic and cook 1 minute.

7. Add roasted chickpeas, vegetable broth, cumin, and smoked paprika to pot.

8. Simmer for 15 minutes to allow flavors to meld together.

9. Blend half the soup with immersion blender, leaving some chickpeas whole for texture.

10. Remove from heat and whisk in tahini and lemon juice until smooth.

11. Season with salt and pepper to taste, garnish with fresh parsley and serve.

Notes

For extra richness, drizzle with good quality olive oil before serving.

Soup can be stored in refrigerator for up to 5 days or frozen for 3 months.
