Description
A creamy, nutty take on the Italian classic this Pistachio Tiramisu layers velvety mascarpone cream, coffee-soaked ladyfingers, and rich pistachio flavor for a refreshing and luxurious dessert.
Ingredients
1 cup shelled pistachios (unsalted)
1/2 cup sugar
8 oz mascarpone cheese
1 cup heavy cream
1/2 tsp vanilla extract
2 tbsp pistachio paste (optional, for extra flavor)
1 1/2 cups strong brewed coffee or espresso, cooled
2 tbsp coffee liqueur (optional)
24 ladyfinger cookies
2 tbsp cocoa powder (for dusting)
Chopped pistachios, for garnish
Instructions
1. Add pistachios to a food processor and pulse until finely ground.
2. In a mixing bowl, beat mascarpone cheese, sugar, vanilla, and pistachio paste (if using) until smooth.
3. In a separate bowl, whip heavy cream until stiff peaks form.
4. Gently fold whipped cream into the mascarpone mixture until fully combined.
5. Combine coffee and coffee liqueur in a shallow dish.
6. Quickly dip ladyfingers in the coffee mixture (don’t soak too long) and arrange in a single layer in an 8×8-inch dish.
7. Spread half of the pistachio cream mixture over the ladyfingers.
8. Add another layer of dipped ladyfingers and top with remaining cream.
9. Dust with cocoa powder and sprinkle chopped pistachios on top.
10. Refrigerate for at least 4 hours or overnight for best flavor.
Notes
For a non-alcoholic version, skip the coffee liqueur.
Add a drizzle of white chocolate on top for extra elegance.
Store covered in the refrigerator for up to 3 days — the flavor improves overnight.
