Description
Crispy-on-the-outside, creamy-on-the-inside roasted potatoes coated in a tangy, garlicky mustard sauce the perfect side dish to elevate any meal.
Ingredients
2 lbs baby potatoes, halved
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
For the Creamy Mustard Sauce:
1/3 cup sour cream
2 tbsp Dijon mustard
1 tbsp whole-grain mustard
1 clove garlic, minced
1 tbsp lemon juice
1 tbsp chopped fresh parsley
Salt and pepper to taste
Instructions
1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
2. In a large bowl, toss the halved potatoes with olive oil, salt, pepper, and paprika until evenly coated.
3. Spread potatoes in a single layer on the baking sheet and roast for 30–35 minutes, flipping halfway through, until golden and crispy.
4. Meanwhile, whisk together sour cream, Dijon mustard, whole-grain mustard, garlic, lemon juice, parsley, salt, and pepper in a small bowl.
5. Once potatoes are done, transfer them to a large bowl and toss gently with the creamy mustard sauce while still warm.
6. Garnish with extra parsley and serve immediately.
Notes
Use Greek yogurt instead of sour cream for a lighter version.
These potatoes pair perfectly with roasted chicken, steak, or grilled veggies.
For extra flavor, add a sprinkle of grated Parmesan before serving.
