Ingredients
1 tbsp olive oil
1 small onion, diced
3 garlic cloves, minced
1/2 cup sun-dried tomatoes (packed in oil), chopped
1 tsp dried basil
1/2 tsp dried oregano
1/2 tsp smoked paprika
1 cup red lentils, rinsed
4 cups vegetable broth
1/2 cup canned coconut milk (or heavy cream)
1 tbsp tomato paste
1 tbsp balsamic vinegar (optional, for depth)
Salt and black pepper, to taste
Fresh basil or parsley for garnish
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add diced onion and cook for 4–5 minutes until softened.
3. Stir in garlic, sun-dried tomatoes, basil, oregano, and smoked paprika; cook for 1–2 minutes until fragrant.
4. Add red lentils, tomato paste, and broth; stir well to combine.
5. Bring to a boil, then reduce heat and simmer for 20–25 minutes until lentils are tender.
6. Stir in coconut milk and balsamic vinegar; simmer 2 more minutes.
7. Blend the soup partially or fully for a creamy consistency.
8. Taste and adjust salt and pepper as needed.
9. Serve warm, garnished with fresh herbs and a drizzle of olive oil.

Use fire-roasted sun-dried tomatoes for a smoky depth.
