Ingredients

  • 8 oz pasta (fettuccine or spaghetti)
  • 2 chicken breasts, diced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 lemon, juiced and zested
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the pasta according to the package instructions until al dente. Drain and set aside.
  2. Heat the olive oil in a large skillet over medium heat. Add the diced chicken and season with salt and pepper. Cook until golden brown and cooked through, about 6-8 minutes.
  3. Toss in the minced garlic and sauté for about 1 minute.
  4. Lower the heat and stir in the heavy cream, lemon juice, and lemon zest. Allow to simmer for 3-5 minutes.
  5. Add the grated Parmesan cheese gradually, stirring until melted and smooth.
  6. Combine the cooked pasta with the sauce, tossing to coat evenly.
  7. Serve warm, garnished with fresh parsley.

Notes

For best results, use fresh lemon juice and zest, and freshly grated Parmesan cheese.
