- 8 oz pasta (fettuccine or spaghetti)
- 2 chicken breasts, diced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 lemon, juiced and zested
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the pasta according to the package instructions until al dente. Drain and set aside.
- Heat the olive oil in a large skillet over medium heat. Add the diced chicken and season with salt and pepper. Cook until golden brown and cooked through, about 6-8 minutes.
- Toss in the minced garlic and sauté for about 1 minute.
- Lower the heat and stir in the heavy cream, lemon juice, and lemon zest. Allow to simmer for 3-5 minutes.
- Add the grated Parmesan cheese gradually, stirring until melted and smooth.
- Combine the cooked pasta with the sauce, tossing to coat evenly.
- Serve warm, garnished with fresh parsley.
Notes
For best results, use fresh lemon juice and zest, and freshly grated Parmesan cheese.
