- 4 cod fillets (6 ounces each, approx. 170g)
- 1 tbsp olive oil (15ml)
- ½ tsp salt (2g)
- ¼ tsp black pepper (1g)
- 3 cloves garlic, minced (9g)
- 1 cup heavy cream (240ml)
- ½ cup chicken broth (120ml)
- ½ cup grated Parmesan cheese (50g)
- ½ cup sun-dried tomatoes, chopped (55g)
- 3 cups baby spinach (90g)
- ½ tsp Italian seasoning (2g)
Instructions
- Heat olive oil in a large skillet over medium heat. Season cod with salt and pepper. Sear fillets for about 4-5 minutes on each side until golden brown. Remove from skillet.
- In the same skillet, add minced garlic and sauté for about a minute until fragrant.
- Pour in heavy cream and chicken broth, stir and let simmer for about 3-4 minutes.
- Add grated Parmesan, sun-dried tomatoes, and Italian seasoning, stirring until the cheese melts and everything combines.
- Add baby spinach, mixing until it wilts, about a minute.
- Return cod to the skillet, coating in the sauce and heat through for another minute before serving.

For dairy-free options, swap heavy cream with coconut cream and chicken broth with vegetable broth.
