Description

A creamy and flavorful chicken Alfredo made with keto-friendly ingredients, perfect for a quick weeknight meal.


Ingredients

  • 1 pound (450g) boneless, skinless chicken breasts
  • 2 tablespoons olive oil or avocado oil
  • 3 garlic cloves, minced
  • 4 oz (115g) cream cheese, softened
  • 1 cup (240ml) heavy cream
  • 3/4 cup (75g) grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Pinch of nutmeg
  • Salt and black pepper to taste
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Pat chicken breasts dry with paper towels. Season both sides with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a skillet over medium-high heat. Add chicken breasts and cook for about 4-5 minutes per side until golden brown and cooked through to an internal temperature of 165°F (74°C). Remove chicken from the skillet and set aside.
  3. Lower the heat to medium and add the minced garlic to the same pan. Sauté for about 30 seconds until fragrant.
  4. Add softened cream cheese to the pan. Whisk or stir until it melts and blends with the garlic oil, about 2-3 minutes.
  5. Slowly add heavy cream while stirring. Allow it to simmer for 3-4 minutes until sauce thickens slightly.
  6. Gradually stir in grated Parmesan cheese until melted and smooth.
  7. Season sauce with nutmeg, salt, and pepper to taste. Adjust seasoning if needed.
  8. Slice rested chicken into strips or pieces and return to the pan, coating in the creamy sauce. Warm together for about 2 minutes.
  9. Garnish with chopped fresh parsley and serve immediately.

Notes

For a pop of color, serve with broccoli or spinach. Store leftovers in an airtight container for up to 3 days, or freeze for 2-3 months.
