- 1 pound (450g) boneless, skinless chicken breasts
- 2 tablespoons olive oil or avocado oil
- 3 garlic cloves, minced
- 4 oz (115g) cream cheese, softened
- 1 cup (240ml) heavy cream
- 3/4 cup (75g) grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Pinch of nutmeg
- Salt and black pepper to taste
- Chopped fresh parsley for garnish (optional)
Instructions
- Pat chicken breasts dry with paper towels. Season both sides with salt, pepper, and Italian seasoning.
- Heat olive oil in a skillet over medium-high heat. Add chicken breasts and cook for about 4-5 minutes per side until golden brown and cooked through to an internal temperature of 165°F (74°C). Remove chicken from the skillet and set aside.
- Lower the heat to medium and add the minced garlic to the same pan. Sauté for about 30 seconds until fragrant.
- Add softened cream cheese to the pan. Whisk or stir until it melts and blends with the garlic oil, about 2-3 minutes.
- Slowly add heavy cream while stirring. Allow it to simmer for 3-4 minutes until sauce thickens slightly.
- Gradually stir in grated Parmesan cheese until melted and smooth.
- Season sauce with nutmeg, salt, and pepper to taste. Adjust seasoning if needed.
- Slice rested chicken into strips or pieces and return to the pan, coating in the creamy sauce. Warm together for about 2 minutes.
- Garnish with chopped fresh parsley and serve immediately.
Notes
For a pop of color, serve with broccoli or spinach. Store leftovers in an airtight container for up to 3 days, or freeze for 2-3 months.
