- 1 lb gnocchi
- 2 cups fresh spinach
- 1 cup feta cheese, crumbled
- 1 cup heavy cream
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Cook the gnocchi according to package instructions, then drain and set aside.
- In a large skillet, heat olive oil over medium heat and add the minced garlic. Sauté until fragrant, about 1 minute.
- Add the fresh spinach and cook until wilted, stirring occasionally.
- Pour in the heavy cream and bring everything to a gentle simmer.
- Stir in the crumbled feta cheese until it melts and combines well with the cream. Season with salt and pepper to taste.
- Add the cooked gnocchi to the skillet, stirring to coat the pasta in the creamy sauce.
- Serve hot, garnished with fresh parsley if desired.
Notes
Best served fresh. Add a splash of cream when reheating if the sauce thickens.
