Instructions

  1. Cook the gnocchi according to package instructions, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat and add the minced garlic. Sauté until fragrant, about 1 minute.
  3. Add the fresh spinach and cook until wilted, stirring occasionally.
  4. Pour in the heavy cream and bring everything to a gentle simmer.
  5. Stir in the crumbled feta cheese until it melts and combines well with the cream. Season with salt and pepper to taste.
  6. Add the cooked gnocchi to the skillet, stirring to coat the pasta in the creamy sauce.
  7. Serve hot, garnished with fresh parsley if desired.

Notes

Best served fresh. Add a splash of cream when reheating if the sauce thickens.
