- 2 boneless, skinless chicken breasts
- 2 cups ramen noodles
- 2 cups chicken broth
- 1 cup heavy cream
- 4 cloves garlic, minced
- 1 cup mixed vegetables (like bok choy, bell peppers, and carrots)
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
- Green onions for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add minced garlic and cook until fragrant.
- Add the chicken breasts and cook until browned and cooked through. Remove the chicken and slice.
- In the same pot, add chicken broth and bring to a boil.
- Add ramen noodles and cook according to package instructions.
- Stir in heavy cream, soy sauce, and mixed vegetables. Cook until the vegetables are tender.
- Return sliced chicken to the pot and stir to combine.
- Season with salt and pepper.
- Serve hot, garnished with chopped green onions.
Notes
Store leftovers in an airtight container in the refrigerator for 2-3 days. Reheat on the stove, adding a splash of chicken broth if needed.
