- 4 boneless skinless chicken breasts
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup sun-dried tomatoes, chopped
- 1 cup fresh spinach
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Grated Parmesan cheese (for topping)
Instructions
- Place the chicken breasts at the bottom of the crockpot.
- In a separate bowl, mix together the heavy cream, chicken broth, sun-dried tomatoes, garlic powder, Italian seasoning, salt, and pepper.
- Pour the mixture over the chicken, making sure each piece is well coated.
- Cover the crockpot and cook on low for 6-8 hours or on high for 4 hours.
- About 30 minutes before serving, add the fresh spinach into the crockpot and give it a good stir.
- Serve hot, topped with grated Parmesan cheese.
Notes
For a thicker sauce, consider adding cornstarch mixed with water near the end of the cooking time. Leftovers keep well in an airtight container in the fridge for 3-4 days or frozen for up to 3 months.
