Description

A comforting dish featuring tender chicken in a rich, creamy sauce with sun-dried tomatoes and fresh spinach, cooked slowly in a crockpot.


Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup fresh spinach
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Grated Parmesan cheese (for topping)

Instructions

  1. Place the chicken breasts at the bottom of the crockpot.
  2. In a separate bowl, mix together the heavy cream, chicken broth, sun-dried tomatoes, garlic powder, Italian seasoning, salt, and pepper.
  3. Pour the mixture over the chicken, making sure each piece is well coated.
  4. Cover the crockpot and cook on low for 6-8 hours or on high for 4 hours.
  5. About 30 minutes before serving, add the fresh spinach into the crockpot and give it a good stir.
  6. Serve hot, topped with grated Parmesan cheese.

Notes

For a thicker sauce, consider adding cornstarch mixed with water near the end of the cooking time. Leftovers keep well in an airtight container in the fridge for 3-4 days or frozen for up to 3 months.
