  • Total Time: 40 minutes
  • Yield: 4 servings 1x
  • Diet: Vegetarian

Description

A comforting creamy pasta dish featuring sweet caramelized onions, perfect for family gatherings or weeknight dinners.

Ingredients

Scale
  • 1 pound pasta of choice
  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 cup heavy cream (or coconut cream for a vegan option)
  • 1 cup grated Parmesan cheese (or nutritional yeast for a vegan option)
  • Salt and pepper to taste
  • 1 tablespoon chili oil
  • Fresh herbs for garnish (optional)

Instructions

  1. Cook the pasta according to package instructions, salting the water for flavor before draining.
  2. Heat the olive oil in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, for about 20-25 minutes until caramelized.
  3. Lower the heat and add the heavy cream to the onions. Stir in the grated Parmesan cheese, salt, and pepper until the cheese melts and the sauce is creamy.
  4. Toss the cooked pasta into the skillet, mixing well to coat every noodle with the sauce.
  5. Drizzle with chili oil and garnish with fresh herbs if desired. Serve warm.

Notes

Serve with a side salad or garlic bread. Leftovers can be stored in the fridge for up to 3 days or frozen for up to 2 months.
