Elegant boneless turkey breast butterflied and stuffed with tangy-sweet cranberry filling, herb-crusted and roasted to perfection. The ultimate holiday centerpiece that serves 6-8 people beautifully.
Ingredients
3–4 pound boneless turkey breast, skin-on
2 cups dried cranberries, chopped
1 cup fresh breadcrumbs
1/2 cup chopped celery
1/4 cup minced onion
2 tablespoons fresh sage, chopped
1 tablespoon olive oil
2 tablespoons butter, softened
2 teaspoons fresh rosemary, minced
1 teaspoon fresh thyme leaves
1 teaspoon kosher salt
1/2 teaspoon black pepper
1/4 teaspoon garlic powder
Kitchen twine for tying
Instructions
1. Preheat oven to 375°F and prepare roasting pan with rack.
2. Butterfly turkey breast by cutting horizontally, leaving 1/2 inch connected.
3. Pound to even 3/4-inch thickness between plastic wrap.
4. Mix cranberries, breadcrumbs, celery, onion, sage, olive oil, salt and pepper.
5. Season turkey inside and out with herbs, salt, and pepper.
6. Spread cranberry mixture evenly across butterflied turkey breast.
7. Roll tightly and secure with kitchen twine every 2 inches.
8. Rub softened butter over entire surface of rolled turkey.
9. Sear in oven-safe skillet until golden brown on all sides.
10. Transfer to oven and roast 45-60 minutes, basting every 20 minutes.
11. Cook until internal temperature reaches 165°F in thickest part.
12. Rest under foil tent for 15 minutes before slicing and serving.
Notes
Turkey can be butterflied and stuffed 1 day ahead, wrapped and refrigerated.
Bring to room temperature 45 minutes before cooking for even results.
Use instant-read thermometer for accurate temperature readings.
Save pan drippings to make delicious gravy for serving.
Leftover turkey keeps refrigerated up to 4 days for sandwiches.
