Ingredients
1 cup all-purpose flour
2 tbsp sugar
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
3/4 cup ricotta cheese
2/3 cup milk
2 large eggs
1 tbsp melted butter
1 tbsp orange zest (from 1 orange)
1/2 tsp vanilla extract
1/2 cup fresh or frozen cranberries (chopped)
Butter or oil, for cooking
Instructions
1. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
2. In a separate bowl, whisk ricotta, milk, eggs, melted butter, orange zest, and vanilla until smooth.
3. Add wet ingredients to dry ingredients and stir gently until just combined — do not overmix.
4. Fold in chopped cranberries.
5. Preheat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
6. Pour 1/4 cup batter per pancake. Cook 2–3 minutes until bubbles form on top; flip and cook another 1–2 minutes until golden.
7. Serve warm with maple syrup, a sprinkle of powdered sugar, or extra orange zest.
Notes
For extra fluffiness, separate eggs and fold in whipped egg whites at the end.
Add white chocolate chips for a dessert-like twist.
