Description
These Quick Cranberry Meatballs are the perfect blend of savory and sweet tender meatballs coated in a tangy cranberry glaze that’s ideal for holiday appetizers or weeknight dinners!
Ingredients
1 lb ground beef (or turkey)
1/3 cup breadcrumbs
1 large egg
1/4 cup finely chopped onion
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp garlic powder
1 can (14 oz) jellied cranberry sauce
3/4 cup chili sauce (or ketchup)
1 tbsp brown sugar
1 tbsp apple cider vinegar
Instructions
1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. In a large bowl, mix ground beef, breadcrumbs, egg, onion, salt, pepper, and garlic powder until combined.
3. Roll into 1-inch meatballs and place on the prepared baking sheet.
4. Bake for 15–18 minutes, or until browned and cooked through.
5. Meanwhile, in a saucepan, combine cranberry sauce, chili sauce, brown sugar, and vinegar.
6. Simmer over medium heat until smooth and slightly thickened.
7. Add baked meatballs to the sauce and stir to coat evenly.
8. Simmer for 5 minutes before serving warm.
Notes
Make ahead and keep warm in a slow cooker for parties.
Substitute ground turkey or pork for a lighter twist.
Add a dash of hot sauce or Dijon mustard for extra kick.
