Perfect for Christmas or any festive dinner, this Cranberry-Glazed Beef Tenderloin pairs juicy, tender beef with a luscious cranberry-balsamic glaze that’s both elegant and crowd-pleasing.
Ingredients
2 lb beef tenderloin, trimmed
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
2 cups fresh or frozen cranberries
1/4 cup honey or maple syrup
2 tbsp balsamic vinegar
1 tbsp Dijon mustard
1 tsp fresh rosemary, chopped
2 garlic cloves, minced
1/4 cup beef broth
Instructions
1. Preheat oven to 425°F (220°C). Pat beef dry and season with salt and pepper.
2. Heat olive oil in a large oven-safe skillet. Sear tenderloin on all sides until browned, about 2 minutes per side.
3. Transfer skillet to oven and roast 15–20 minutes for medium-rare (or to preferred doneness). Remove and rest 10 minutes.
4. Meanwhile, in a small saucepan combine cranberries, honey, balsamic vinegar, Dijon, rosemary, garlic, and beef broth.
5. Simmer 8–10 minutes until cranberries burst and sauce thickens slightly.
6. Slice beef and spoon warm cranberry glaze over the top.
7. Garnish with fresh rosemary and serve.
Notes
Use a meat thermometer for perfect results — 130°F (54°C) for medium-rare.
The glaze also pairs beautifully with pork or chicken.
Make the cranberry sauce up to 2 days ahead and warm before serving.
