Ingredients
2 cups all-purpose flour
1 cup old-fashioned oats
1 cup packed brown sugar
1/2 cup granulated sugar
1 cup cold butter, cubed
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
3 cups fresh cranberries
1/2 cup orange juice
2 tablespoons cornstarch
1 teaspoon vanilla extract
Instructions
1. Preheat oven to 350°F and line 9×13 inch pan with parchment paper.
2. In large bowl, combine flour, oats, brown sugar, salt, and cinnamon.
3. Cut in cold butter until mixture resembles coarse crumbs.
4. Press two-thirds of crumb mixture into prepared pan.
5. In saucepan, combine cranberries, orange juice, granulated sugar, and cornstarch.
6. Cook over medium heat 8-10 minutes until cranberries burst and mixture thickens.
7. Stir in vanilla extract and let cool slightly.
8. Spread cranberry filling over base layer.
9. Sprinkle remaining crumb mixture over filling.
10. Bake 35-40 minutes until golden brown and filling bubbles.
11. Cool completely before cutting, about 2 hours.
Notes
Store covered at room temperature up to 5 days.
Can be made 3 days ahead – flavors improve over time.
Freeze individual bars up to 3 months.
