Description

Ingredients

1 lb lump crab meat, picked clean

3 tablespoons mayonnaise

1 large egg, beaten

1 teaspoon Dijon mustard

1/2 teaspoon Worcestershire sauce

1 teaspoon Old Bay seasoning

1 tablespoon fresh lemon juice

2 green onions, finely chopped

2 tablespoons fresh parsley, chopped

1/4 cup panko breadcrumbs

12 egg roll wrappers

Vegetable oil for frying

Salt and pepper to taste


Instructions

1. Carefully pick through crab meat to remove shell fragments and pat dry.

2. In large bowl, mix mayonnaise, beaten egg, Dijon mustard, and Worcestershire sauce.

3. Add Old Bay seasoning, lemon juice, green onions, and parsley to mixture.

4. Gently fold in crab meat and panko breadcrumbs, being careful not to break up crab lumps.

5. Season with salt and pepper, then refrigerate mixture for 15 minutes.

6. Heat oil in heavy pot or deep fryer to 350°F.

7. Place egg roll wrapper diamond-style with one corner pointing toward you.

8. Spoon 2-3 tablespoons crab mixture onto center of wrapper.

9. Fold bottom corner over filling, fold in side corners, roll tightly toward top.

10. Seal final corner with water, ensuring all seams are tight.

11. Fry egg rolls in batches for 2-3 minutes until golden brown.

12. Remove and drain on paper towel-lined plates for 2-3 minutes before serving.

Notes

Don’t overfill wrappers or they may burst during frying.

Maintain oil temperature at 350°F for best results.

Can be assembled up to 4 hours ahead and refrigerated before frying.

Serve immediately for best texture and flavor.

Leftover egg rolls can be reheated in 350°F oven for 8-10 minutes.
