Ingredients
1 medium butternut squash, peeled and cubed
2 tbsp olive oil
1 tbsp maple syrup
1/2 tsp ground cinnamon
1/2 tsp salt
1/4 tsp black pepper
Fresh thyme or rosemary for garnish (optional)
Instructions
1. Preheat oven to 400°F (200°C).
2. Peel and cube the butternut squash into 1-inch pieces.
3. In a large bowl, toss squash with olive oil, maple syrup, cinnamon, salt, and pepper.
4. Spread evenly on a parchment-lined baking sheet.
5. Roast for 25–30 minutes, stirring halfway through, until tender and golden brown.
6. Garnish with thyme or rosemary and serve warm.
Notes
For a savory twist, skip the maple syrup and cinnamon and season with garlic powder and rosemary.
