Description

Thick, chewy, and loaded with flavor these Cowboy Cookies are packed with oats, chocolate chips, coconut, and pecans for the ultimate hearty treat that satisfies every craving.

Ingredients

Scale

1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

2 tsp vanilla extract

2 cups all-purpose flour

1 tsp baking soda

1/2 tsp baking powder

1/2 tsp salt

2 cups old-fashioned oats

1 cup shredded coconut

1 cup semisweet chocolate chips

1 cup chopped pecans

Instructions

1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.

2. In a large mixing bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.

3. Add eggs and vanilla, beating until combined.

4. In a separate bowl, whisk together flour, baking soda, baking powder, and salt.

5. Gradually add dry ingredients to the wet mixture, mixing just until combined.

6. Stir in oats, coconut, chocolate chips, and pecans.

7. Scoop dough into 2-tablespoon-sized portions and place them 2 inches apart on the prepared baking sheets.

8. Bake for 10–12 minutes, or until edges are golden and centers are just set.

9. Cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For extra chewy cookies, slightly underbake and let them finish setting on the pan.

Swap pecans for walnuts or omit nuts for a nut-free version.

These freeze beautifully — store baked or unbaked dough balls in the freezer for up to 3 months.
