Description

  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (10 ounces) diced tomatoes with green chilies
  • 1 cup shredded cheddar cheese
  • 1 cup cream cheese
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Tortilla chips for serving

Instructions

  1. In a large skillet over medium heat, cook the ground beef until it’s browned. Drain any excess fat.
  2. Add the black beans, corn, and diced tomatoes with green chilies to the skillet, stirring to combine everything.
  3. Reduce the heat to low and mix in the cream cheese, stirring until it melts and combines well.
  4. Add the cheddar cheese and season with chili powder, garlic powder, salt, and pepper. Stir until everything is melted and creamy.
  5. Serve warm with tortilla chips.

Notes

For more spice, consider adding jalapeños or a bit of hot sauce. You can make a vegetarian version by omitting the ground beef and adding more beans or vegetables.
