- 1 cup full-fat cottage cheese (strained if watery)
- 1 cup all-purpose flour (or substitute with gluten-free or almond flour)
Instructions
- In a bowl, mix cottage cheese and flour until a soft dough forms.
- Turn dough onto a floured surface and knead for 2–3 minutes until smooth.
- Divide dough into 2–3 pieces and roll each to about 1/4-inch thickness.
- Preheat a skillet over medium heat or oven to 450°F (230°C).
- Cook in the skillet for 2–3 minutes on each side, or bake for 6–8 minutes until golden and slightly puffed.
- Optional: Brush with olive oil or butter and sprinkle with herbs or spices.
- Let cool slightly before serving or storing.
