- 1 egg
- 2 slices of bread (sourdough, whole wheat, or your favorite)
- ½ ripe avocado
- ½ cup cottage cheese
- ⅛ teaspoon paprika
- ⅛ teaspoon salt
- ⅛ teaspoon black pepper
- 1 teaspoon Dijon mustard
- 1 tablespoon sliced green onion
- Everything-but-the-bagel seasoning
- 1 tablespoon hemp seeds
Instructions
- Hard-Boil the egg: Place your egg in a small pot and cover it with cold water by about an inch. Bring the water to a rolling boil over high heat. Cover the pot with a lid and remove it from heat. Let the egg sit for 9-12 minutes; when time’s up, transfer it to ice water. Let cool, then peel and set aside.
- Toast the bread: While your egg cools, toast the bread slices until golden and lightly crisp.
- Make the cottage cheese avocado mix: Mash the avocado, cottage cheese, and peeled, chopped egg in a bowl. Stir in paprika, salt, pepper, Dijon mustard, and green onion. Adjust seasonings to taste.
- Assemble the toast: Spread the cottage cheese-avocado mixture generously on the toasted bread. Top with everything-but-the-bagel seasoning and hemp seeds.
- Serve immediately while fresh and crisp.
Notes
Pair with a side salad or fresh fruit for a complete meal. Store the avocado mixture separately from the bread for best results.
