Ingredients
1 cup all-purpose flour
2 tbsp sugar
1 tbsp baking powder
Pinch of salt
3/4 cup strong brewed coffee, cooled
1/2 cup milk
1 egg
2 tbsp melted butter
Instructions
1. Whisk flour, sugar, baking powder, and salt together.
2. In another bowl, whisk coffee, milk, egg, and butter.
3. Combine wet and dry ingredients until just mixed.
4. Heat a nonstick skillet over medium heat.
5. Pour 1/4 cup batter per pancake and cook until bubbles form.
6. Flip and cook until golden brown.
7. Serve warm with syrup or toppings.
Notes
Do not overmix batter — lumps help keep pancakes fluffy.
You can swap milk for almond or oat milk.
