Description
Coconut Pineapple Bites are chewy, sweet, and packed with tropical flavor. These no-bake treats are ready in minutes and great for any snack.
Ingredients
1 cup shredded unsweetened coconut
1/2 cup chopped pineapple (fresh or canned, drained)
1/4 cup oat or almond flour
2 tbsp honey or maple syrup
1/2 tsp vanilla extract
Pinch of salt
Instructions
1. Add all ingredients to a food processor.
2. Pulse until mixture is sticky and blended.
3. Chill for 15 minutes.
4. Roll into bite-sized balls.
5. Place on a lined tray.
6. Chill again for 15–30 minutes before serving.
Notes
Add lime zest or dried mango for a twist.
Use almond flour for a nutty boost.
Store in fridge or freeze in batches.
