  • 2 oz feta (crumbled)

Instructions

  1. Cook the orzo according to the package instructions. Drain and set aside.
  2. In a large bowl, whisk together the minced garlic, salt, balsamic vinegar, olive oil, dijon mustard, and pepper.
  3. Add the cooked orzo, baby spinach, and sun-dried tomatoes to the bowl. Toss gently to coat.
  4. Sprinkle the crumbled feta on top.
  5. Serve immediately, or chill in the refrigerator for later.
