Description
Boneless turkey breast marinated in fresh citrus juices, herbs, and garlic, then roasted to perfect tenderness. Bright, aromatic flavors make this an elegant centerpiece for any dinner.
Ingredients
3–4 pound boneless turkey breast, skin-on
2 large lemons, zested and juiced
1 large orange, zested and juiced
3 tablespoons fresh rosemary, chopped
2 tablespoons fresh thyme leaves
4 cloves garlic, minced
1/4 cup extra virgin olive oil
1 tablespoon kosher salt
1/2 teaspoon black pepper
2 tablespoons butter, softened
Fresh herbs for garnish
Instructions
1. Preheat oven to 375°F and prepare roasting pan with rack.
2. Pat turkey breast completely dry and score skin in crosshatch pattern.
3. Combine citrus juices, zests, herbs, garlic, olive oil, salt, and pepper.
4. Rub marinade generously under and over turkey skin.
5. Let marinate at room temperature for 45 minutes.
6. Place turkey on prepared rack and roast 60-75 minutes.
7. Baste every 20 minutes with accumulated pan juices.
8. Tent with foil if skin browns too quickly.
9. Check internal temperature reaches 165°F in thickest part.
10. Remove from oven and tent with foil for 15 minutes to rest.
11. Slice against the grain and garnish with fresh herbs.
Notes
Don’t skip the marinating time for maximum flavor penetration.
Use instant-read thermometer for perfect doneness every time.
Baste frequently to keep turkey moist during roasting.
Fresh herbs work much better than dried for this recipe.
Store leftovers refrigerated up to 4 days for sandwiches.
