Description

Ingredients

2 1/2 cups all-purpose flour

2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

2 tsp ground cinnamon

1 tsp ground ginger

1/2 tsp nutmeg

1/4 tsp ground cloves

1 cup unsalted butter, softened

1 cup brown sugar

1/2 cup granulated sugar

3 large eggs

1 tsp vanilla extract

1 cup buttermilk

— Eggnog Buttercream —

1 cup unsalted butter, softened

34 cups powdered sugar

1/4 cup eggnog

1/2 tsp nutmeg

1 tsp vanilla extract

Pinch of salt


Instructions

1. Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans.

2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves.

3. In a large bowl, cream butter, brown sugar, and granulated sugar until light and fluffy.

4. Add eggs one at a time, then mix in vanilla extract.

5. Alternate adding dry ingredients and buttermilk to the wet mixture, beginning and ending with dry ingredients. Mix until just combined.

6. Divide batter evenly between pans and bake 25–30 minutes or until a toothpick comes out clean.

7. Cool completely before frosting.

8. For the Eggnog Buttercream: beat butter until creamy, then gradually add powdered sugar. Mix in eggnog, vanilla, nutmeg, and salt until smooth and fluffy.

9. Frost cooled cakes, stacking layers with buttercream in between. Decorate with a dusting of cinnamon or sugared cranberries.

Notes

For extra flavor, brush cake layers with a little spiced rum or eggnog before frosting.

Store in an airtight container at room temperature for up to 2 days or refrigerate for up to 5.
