Description

A festive showstopper! This Christmas Red Velvet Cheesecake features a rich, velvety red cheesecake filling on a chocolatey Oreo crust topped with creamy whipped topping and white chocolate curls for a stunning holiday dessert.

For the crust:

30 Oreo cookies, crushed (with filling)

5 tbsp unsalted butter, melted

For the cheesecake filling:

3 (8 oz) packages cream cheese, softened

1 cup granulated sugar

1 cup sour cream

3 large eggs

2 tbsp cocoa powder

1 tsp vanilla extract

2 tsp red food coloring (gel preferred)

1/2 cup heavy cream

For the topping:

1 cup whipped cream or whipped topping

White chocolate curls or sprinkles, for garnish


Instructions

1. Preheat oven to 325°F (160°C). Grease a 9-inch springform pan and line the bottom with parchment paper.

2. In a bowl, combine crushed Oreos and melted butter. Press mixture firmly into the bottom of the prepared pan. Bake for 10 minutes, then let cool.

3. In a large mixing bowl, beat cream cheese and sugar until smooth and fluffy. Add sour cream, cocoa powder, vanilla, and red food coloring. Mix until evenly colored.

4. Add eggs one at a time, mixing gently after each addition. Stir in heavy cream until the batter is smooth.

5. Pour filling over cooled crust and smooth the top.

6. Place the springform pan into a larger baking dish. Pour hot water halfway up the sides to create a water bath.

7. Bake for 60–70 minutes or until the center is just set with a slight jiggle.

8. Turn off oven and crack the door. Let cheesecake cool inside for 1 hour, then transfer to a wire rack to cool completely.

9. Refrigerate at least 6 hours or overnight before removing from pan.

10. Top with whipped cream and white chocolate curls just before serving.

Notes

For extra decadence, drizzle with white chocolate ganache.

Use gel food coloring for a vibrant red color without thinning the batter.

Cheesecake can be made up to 2 days ahead — store covered in the fridge.
