A festive and elegant Christmas Pavlova Trifle featuring layers of crisp meringue, whipped cream, and vibrant seasonal fruits a show-stopping dessert that’s light, creamy, and bursting with holiday cheer.
Ingredients
4 large egg whites
1 cup caster sugar
1 tsp cornstarch
1 tsp white vinegar
1 tsp vanilla extract
2 cups heavy cream, whipped
2 tbsp powdered sugar
1 tsp vanilla extract (for cream)
1 cup fresh strawberries, sliced
1 cup fresh raspberries
1 cup fresh blueberries
1 cup kiwi, peeled and sliced
1/2 cup pomegranate seeds
Fresh mint leaves, for garnish
Optional: crushed store-bought meringue for extra texture
Instructions
1. Preheat oven to 250°F (120°C) and line a baking sheet with parchment paper.
2. Whip egg whites until soft peaks form, then gradually add caster sugar until stiff, glossy peaks form.
3. Fold in cornstarch, vinegar, and vanilla.
4. Spread mixture into a circle or small rounds on the baking sheet.
5. Bake for 1 hour, then turn off the oven and let the meringue cool completely inside.
6. Whip heavy cream with powdered sugar and vanilla until soft peaks form.
7. To assemble, layer chunks of meringue, whipped cream, and assorted fruits in a large trifle dish.
8. Repeat the layers until the dish is filled, finishing with cream and fruit on top.
9. Garnish with pomegranate seeds and mint leaves.
10. Chill for at least 1 hour before serving.
Notes
Make the meringue a day ahead and store it in an airtight container.
You can use store-bought meringue nests for a quicker version.
Customize the fruits with your favorites — mango, cherries, or passionfruit work beautifully.
Best served the same day it’s assembled for the perfect texture.
