Ingredients
2 cups heavy whipping cream (36% fat)
½ cup granulated sugar
3 oz dark chocolate (60-70% cacao), finely chopped
2 tablespoons fresh orange juice
1 tablespoon fresh orange zest
Pinch of salt
Chocolate shavings for garnish (optional)
Candied orange peel for garnish (optional)
Whipped cream for serving (optional)
Instructions
1. Arrange 4-6 serving glasses or ramekins on tray.
2. Finely chop dark chocolate and set aside.
3. Zest orange carefully, avoiding white pith.
4. Combine heavy cream and sugar in heavy-bottomed saucepan.
5. Heat over medium heat, stirring constantly until mixture boils.
6. Boil for exactly 3 minutes without stirring.
7. Remove from heat and add chopped chocolate immediately.
8. Stir until chocolate completely melts and mixture is smooth.
9. Add orange juice, zest, and pinch of salt, stirring well.
10. Strain mixture through fine mesh sieve into serving vessels.
11. Refrigerate minimum 4 hours or overnight until completely set.
12. Garnish with chocolate shavings or candied orange before serving.
Notes
Use heavy whipping cream with minimum 36% fat for proper setting.
Don’t skip the full 3-minute boiling time or posset won’t set.
Strain mixture for perfectly smooth, silky texture.
Can be made up to 3 days ahead and stored covered.
Remove from refrigerator 10 minutes before serving for best flavor.
