Ingredients

- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup chocolate chips
- 1 cup dark chocolate (for coating)
Instructions
- In a bowl, mix together the softened butter, brown sugar, and granulated sugar until creamy.
- Add in the vanilla extract and salt, and mix well to incorporate.
- Gradually stir in the flour until combined, then fold in the chocolate chips.
- Melt the dark chocolate using a microwave or double boiler.
- Dip the bottom of cupcake liners in the melted chocolate, and let them set.
- Once the chocolate has set, fill each liner with the cookie dough mixture.
- Cover the top with more melted chocolate and return them to the fridge to chill until firm.
- Finally, remove the cookie dough cups from the liners and enjoy!
Notes
For extra indulgence, garnish with sea salt or mini chocolate chips. Store in an airtight container in the refrigerator for up to a week.
