Description

Ingredients

2 cups cherries (pitted)

1/2 cup brown sugar

1/4 cup melted unsalted butter

1 cup all-purpose flour

1/2 cup cocoa powder

1 tsp baking powder

1/4 tsp salt

2 eggs

1/2 cup buttermilk

1/2 cup granulated sugar

1/3 cup neutral oil

1 tsp vanilla extract


Instructions

1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan.

2. Mix melted butter and brown sugar in the pan. Spread cherries evenly on top.

3. Whisk flour, cocoa, baking powder, and salt in a bowl.

4. In another bowl, whisk eggs, sugar, oil, buttermilk, and vanilla.

5. Combine wet and dry ingredients until just mixed.

6. Pour batter over cherry mixture.

7. Bake for 35–40 minutes or until a toothpick comes out with moist crumbs.

8. Cool in pan for 10 minutes, then invert onto a plate.

9. Let cool before serving.

Notes

Use frozen cherries if fresh aren’t available just thaw and pat dry.

Add a pinch of cinnamon or espresso powder for flavor depth.
