1/4 cup fresh parsley, chopped

1/4 cup extra virgin olive oil

3 tablespoons fresh lemon juice

2 garlic cloves, minced

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Drain and rinse chickpeas thoroughly in fine-mesh strainer until water runs clear.

2. Prepare all vegetables by washing, drying, and cutting into uniform pieces.

3. Whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper in small bowl.

4. Combine chickpeas, cucumber, tomatoes, red onion, and parsley in large mixing bowl.

5. Drizzle with half the dressing and toss gently to coat evenly.

6. Add diced avocado just before serving to prevent browning.

7. Crumble feta cheese over the top for visual appeal.

8. Drizzle with remaining dressing and toss very gently.
