Chicken Wild Rice Casserole is a hearty, creamy comfort food dish made with tender chicken, wild rice, veggies, and a rich creamy base.
Ingredients
2 cups cooked chicken (shredded or diced)
1 cup uncooked wild rice
3 cups chicken broth
1 cup diced onion
1 cup diced carrots
1 cup diced celery
1 can cream of chicken soup (or sour cream)
2 tbsp butter
Salt and pepper to taste
Instructions
1. Cook wild rice according to package directions.
2. Preheat oven to 350°F (175°C).
3. Sauté onion, carrots, and celery in butter until softened.
4. Combine rice, chicken, sautéed veggies, broth, and creamy base in a large bowl.
5. Transfer mixture to a greased casserole dish.
6. Bake uncovered for 35–40 minutes until bubbling and golden.
7. Let rest for 5 minutes before serving.
Notes
You can substitute cauliflower rice for a lighter option.
Store leftovers in an airtight container for up to 3 days.
